Recipe adapted from Buttercream and Chantilly Factory

Recently I've been scouting the internet on a DIY gift hunting mission for christmas. Something student budget appropriate but still totally cool. While on my hunt, I found a homemade Biscoff (Speculoos) spread recipe by Buttercream & Chantilly Factory and I cried a little at the thought of being able to have the delicious spread back in my life instead of having to travel to Europe to find it.

The following recipe can be made with any type of biscuit that your heart desires (think Oreo, Chocolate chip cookie, the possibilities are endless). In this instance, I tried the original Biscoff (Speculoos) because it'a a little gingerbready and I thought that suited christmas, as well as Anzac biscuits for an Australian twist.

Ingredients:

  • 200g of your desired cookie (blend in the food processor to form fine crumbs)
  • 2 tablespoons of soft butter
  • 1/2 cup of sweetened condensed milk
  • 1/4 cup of evaporated milk
  • Airtight Jar
  • Microwave safe bowl

Method:

  1. Combine butter, sweetened condensed milk and evaporated milk into a microwave safe bowl and microwave until combined, stirring every minute (mine took 1.5 minutes but will vary depending on your microwave. You can also combine over stovetop on a low heat)
  2. Stir biscuit crumbs into combined mix and pour into serving jar
  3. Refrigerate until set

This recipe makes a fantastic gift for your sweet-toothed friends for all occasions and tastes amazing. There are a variety of ways of using this spread however you'll see me coming out for a snack with a spoon eating it straight from the jar *guilty*.

Have you ever tried Speculoos? What would be your favourite biscuit spread? Let me know in the comments.
